Loaded fried rice

3c sliced veggies
3tbs cooking oil
3 cloves garlic
16oz extra firm tofu (regular or frozen then thawed for added texture)
1-2 tsp honey
3c prepared rice
Extra protein or veggies, if desired
3 eggs
4tbs low-sodium soy sauce or aminos, divided
1tbs oyster sauce
Salt & pepper to taste
2tsp sesame oil
1/2 c green onions
Directions
Press tofu for 15 minutes to remove excess water.
Add cooking oil to non-stick pan. Depending on veggies selected, add and saute veggies for 3-4 minutes to soften. Raw cabbage, shredded carrot, and similar vegetables will benefit from this step. Leafy greens like spinach should be added later in the process.
Once veggies have begun to soften, add minced garlic and saute for an additional minute. Crumble tofu into the pan, add any additional protein you want, and add 2tbs soy sauce and a drizzle of honey (1-2tsp). Stir and cook for an additional 4-5 minutes.
Add prepared rice on top of the vegetable and protein mixture, and crack three eggs on top of that. Add remaining 2tbs of soy sauce, 1tbs of oyster sauce, and salt and pepper per your preference. Once the egg is cooked through, turn off the heat and stir in the sesame oil, green onions, and any quick-wilting veggies like spinach, if using. Once green onions and optional veggies are wilted, taste and adjust salt and sauces as desired, then serve.
