Harissa Pasta

6x Porky Lights Premium Pork Sausages (50% Less Fat) * GIFTED
1x Onion, Diced
3x Garlic Cloves, Minced
2x Tbsp Harissa Paste
200g Roasted Red Peppers, Chopped
400g Chopped Tomatoes
1x Tbsp Tomato Puree
1x Tsp Smoked Paprika
Pinch, Dried Chilli Flakes
250g Penne Pasta, Dried
50g Cheddar Cheese, Reduced Fat
Parsley, Fresh
4x Reduced Fat Garlic Bread Slices
Directions
Remove the skins from the sausages. Fry in a pan, breaking them up with a wooden spoon until browned, then transfer to the slow cooker.
Add the onion, garlic, harissa paste, roasted red peppers, chopped tomatoes, tomato purée, smoked paprika, and chilli flakes. Stir well to combine.
Cover and cook on high for 2–3 hours or low for 4–5 hours, until the sausages are fully cooked and the sauce is thick and fragrant.
Meanwhile, cook the Penne Pasta according to packet instructions, drain and set aside.
Once the sauce is ready, stir the cooked Penne Pasta through until evenly coated.
Stir in the Reduced Fat Cheddar until melted and creamy.
Garnish with Fresh Parsley and serve with Reduced Fat Garlic Bread Slices on the side. Enjoy!
