Cranberry & Pistachio Refrigerator Cookies

Ingredients

Buttery, crisp, and loaded with sweet cranberries & crunchy pistachios 😍 These slice-and-bake cookies are perfect for holidays, gifting, or keeping a cookie dough stash ready in the fridge!

1 cup unsalted butter, softened

¾ cup powdered sugar

1 tsp vanilla extract

2 cups all-purpose flour

¼ tsp salt

½ cup dried cranberries, chopped

½ cup pistachios, chopped

Directions

In a bowl, beat butter and powdered sugar until light & creamy. Mix in vanilla.

Add flour and salt, mixing until a soft dough forms. Fold in cranberries & pistachios.

Shape dough into a log, wrap tightly in plastic wrap, and refrigerate for at least 2 hours.

Preheat oven to 350°F (175°C). Slice dough into rounds and place on a lined baking sheet.

Bake for 10–12 minutes until edges are lightly golden. Cool completely before serving 😍

Optional: drizzle with white chocolate or add orange zest for extra flavor!N
