Slow Cooker Amish Corn Chowder

4 cups fresh or frozen corn kernels
1 medium onion, diced
2 medium potatoes, peeled and diced
3 cups chicken or vegetable broth
1 cup heavy cream
4 slices bacon, cooked and crumbled
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika
2 tbsp butter
2 tbsp all-purpose flour
2 tbsp chopped fresh parsley (for garnish)
Directions
Combine corn, onion, potatoes, broth, garlic, salt, pepper, and paprika in slow cooker.
Cover and cook on low for 6-8 hours until potatoes are tender.
Make roux: melt butter, stir in flour, cook for 1-2 mins. Gradually whisk in cream.
Stir cream mixture into slow cooker and mix well.
Add bacon, stir, and cook on high for 30 mins.
Serve hot, garnish with parsley, and enjoy!
