Cheesy Taco Spaghetti

12 oz spaghetti
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (1 oz)
1 can Rotel (10 oz, undrained)
1 cup beef broth
1 cup heavy cream or half-and-half
1 cup shredded cheddar cheese
1 cup shredded mozzarella (optional but extra creamy)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Optional toppings: cilantro, sour cream, jalapeños, green onions
Directions
Cook spaghetti according to package directions, drain, and set aside.
In a large skillet, cook ground beef and diced onion over medium heat until the beef is browned. Drain if needed.
Add minced garlic, taco seasoning, paprika, garlic powder, and pepper. Cook 1 minute.
Stir in Rotel, beef broth, and heavy cream. Bring to a gentle simmer for 3–4 minutes.
Add cheddar (and mozzarella if using), stirring until melted and creamy.
Add cooked spaghetti to the skillet and toss until fully coated in the sauce.
Let simmer 1–2 minutes so the flavors blend.
Add desired toppings and serve warm.
