・4-5 Roma Tomatoes
・1 bulb Garlic
・3 tablespoons Full-Fat Yogurt
・1 tablespoon Tahini
・Salt
・Olive Oil
Directions
Preheat the oven to 400°F. Chop your garlic into thin slices.
Slice the tomatoes in half. Place on a baking tray, salt heavily, and drizzle with olive oil. Put the tray in the oven once heated and let bake for 25 minutes. After that time passes, broil until color appears (about 5 mintues). Make sure to check often during this process.
Take out of the oven and peel the skin after letting the tomatoes cool. You will also need to remove the core. Put in a bowl or tray with sides.
Mix yogurt with tahini. Once combined, stir in two crushed cloves of garlic and salt to your liking. Add to tomatoes. Mix well but leave some chunks of tomato for texture.
Prepare a quick tadka by heating a tablespoon of butter and a tablespoon of olive oil. Add in sliced garlic. Once it starts showing color, immediately pour over dish.
Serve with flatbread.
