Prawn with Mango, Avocado & Citrus-sesame Dressing

Salad:
1 ripe mango, diced
1 avocado, diced
¼ small red onion
4 baby cucumbers, sliced thinly
400 prawns, cooked and cut into chunks
1 small handful coriander, sprinkled on top
Sesame seeds for garnish
Citrus-Sesame Dressing:
1 tsp rice vinegar
1½ tsp sesame oil
Juice of 1½ limes
½ tsp fresh ginger, finely grated
Pinch of salt to taste
½ tsp–1 tsp maple syrup (or honey)
Directions
Begin by preparing the salad ingredients. Dice the mango and avocado into bite-sized pieces. Thinly slice the red onion and baby cucumbers. Cut the cooked prawns into chunks. In a large mixing bowl, gently add the mango, avocado, red onion, cucumbers, and prawns. Set aside.
Then, make the dressing. In a small bowl, whisk together the rice vinegar, sesame oil, lime juice, grated ginger, pinch of salt, and maple syrup or honey until well-combined.
Pour the citrus-sesame dressing over the salad ingredients. Gently toss everything together until all ingredients are evenly coated with the dressing. Transfer to serving plates or a platter. Sprinkle with fresh coriander, sesame seeds, and a drizzle of sesame oil (optional) on top. Serve immediately.
