Pesto Chicken Flatbread

Ingredients

2 large boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 pieces of flatbread (store-bought or homemade)

1 cup fresh basil pesto (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Directions

Preheat Oven

Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature to melt the cheese and crisp the flatbread effectively.

Season Chicken

Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Optionally, add garlic powder or Italian seasoning for extra flavor.

Cook Chicken

Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until browned and cooked through, with an internal temperature of 165°F (75°C).

Rest and Slice Chicken

Remove chicken from the skillet and let it rest for 5 minutes to retain juices. Then slice into thin strips.

Prepare Flatbreads

Lay the flatbreads out on a baking sheet. Spread about a quarter cup of basil pesto evenly over each flatbread.

Add Chicken

Distribute the sliced chicken strips evenly over the pesto-covered flatbreads.

Add Cheese and Tomatoes

Sprinkle shredded mozzarella cheese over the chicken, then scatter the halved cherry tomatoes evenly on top.

Top with Parmesan

Sprinkle grated Parmesan cheese evenly across the flatbreads for a flavorful topping.

Bake

Place the baking sheet in the preheated oven and bake for 10-12 minutes until the mozzarella melts and becomes bubbly, and the edges of the flatbread are golden and crisp.

Broil for Crispiness (Optional)

For a crispier top, switch the oven to broil and broil the flatbreads for 1-2 minutes, watching closely to prevent burning.

Cool Slightly

Remove the flatbreads from the oven carefully and let them cool for a minute to set the cheese slightly.

Slice and Garnish

Slice each flatbread into quarters or halves. Garnish with fresh basil leaves if desired for a pop of color and fresh flavor.

Serve the flatbreads warm alongside a fresh side salad or your favorite dipping sauce for a complete meal.
