Greek Chicken Gyro Wraps with Mint Yogurt

For the gyro chicken:
500 g (1 lb) boneless, skinless chicken thighs or breasts
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1½ tsp dried oregano
1 tsp paprika
½ tsp ground cumin
Salt and black pepper, to taste
For the mint yogurt sauce:
1 cup Greek yogurt
2 tbsp fresh mint, finely chopped
1 tbsp lemon juice
1 tbsp olive oil
1 small garlic clove, grated
Salt, to taste
For serving:
4 pita breads or flatbreads
Sliced tomatoes
Sliced red onion
Shredded lettuce or sliced cucumber
Directions
Marinate the chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Add chicken and marinate at least 30 minutes (up to 12 hours).
Cook the chicken: Heat a skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side until golden, lightly charred, and cooked through. Rest 5 minutes, then slice thinly.
Make mint yogurt: In a bowl, mix Greek yogurt, mint, lemon juice, olive oil, garlic, and salt until smooth and creamy.
Warm pitas: Lightly warm pita breads in a pan or oven.
Assemble wraps: Fill pitas with sliced chicken, tomatoes, onion, lettuce or cucumber, and generous spoonfuls of mint yogurt sauce.
Serve: Fold and serve immediately, with extra mint yogurt on the side if desired.
