Moroccan Beef & Feta Potato Bake

800g sweet potato - finely chopped
1 tbsp Moroccan seasoning
1 red onion - ¼ thinly sliced, ¾ finely chopped
1 carrot - peeled, finely chopped
500g beef mince
1 can diced tomatoes
1 cup frozen peas
100g feta - crumbled
To Serve
1 cup coriander leaves
Greek style yoghurt
Directions
Preheat oven to 220°c and line a roasting pan with baking paper.
Combine potato, 1 tsp olive oil & ½ Moroccan seasoning in a large bowl and toss to combine.
Spread potato mixture evenly in a prepared pan and bake for 15 mins until tender.
Thinly slice ¼ onion crossways and transfer to small bowl. Finely chop the remaining onion.
Heat oil in a large frying pan over medium heat, add carrot & chopped onion. Add the beef mince and cook until it changes colour.
Add the remaining Moroccan seasoning and stir to combine.
Add tomatoes, stir and bring to a simmer. Add peas and stir through.
Spoon mixture over the potato in the pan, sprinkle with feta and bake for about 10 mins until heated through.
Serve with coriander, yoghurt and the thinly sliced onion.
