Greek Salad

Ingredients

  • 8 Chicken thighs (1-2 each meal)

  • 3 Bell Peppers (Red, Orange, Yellow)

  • 16.5 oz NatureSweet cherub tomatoes

  • 1 cucumber

  • 1 red onion

  • LOTS of Mint (See pics)

  • 16oz spring mix

  • 12oz president fat free feta cheese

  • Kens simply vinaigrette Greek dressing (4-8oz)

  • Salt, black pepper, paprika, garlic powder

Directions

  1. Cut peppers into short strips

  2. Slice onion (cut long ones in half)

  3. Slice cucumber

  4. Halve cherry tomatoes

  5. Add in large bowl with greens

  6. toss with Greek salad dressing and crumbled feta

  7. Add mint!!! (See pics)

Chicken

  1. Cook in pan on high heat with salt and pepper

  2. Add paprika and a little garlic powder a few minutes before finishing so it doesn’t burn

  3. Cool, slice then plate on top of salad

Notes

Don’t forget the mint again I swear to god

You’ll need a huge tubberware

No olives
