Bisgolli Steak Method

Ingredients

1 3/4 lb. 3/4-1 in. Thick NY strip steak

2 tablespoons Butter (add 1/2 -1 tablespoon every time steak is flipped)

Seasoning of your choice

Directions

Heat pan medium with butter COLD in pan

Steaks at room temp before

Pat dry and season

Heat butter to almost smoking

Sear both sides 2-3 mins

Sear smaller sides 30-45 seconds

Baste in the butter during cook if desired, if not air fry at 400 for 1-3 minutes

Rest for 10-15 minutes uncovered
