Wild Turkey Breakfast Sausage

Ingredients

1.5lbs Turkey, cut into 1.5” cubes

1.5lbs pork back fat, but into 1.5” cubes

1tbsp kosher salt

2tsp fresh ground black pepper

2 cloves minced garlic

6 sage leaves, chopped

2tsp freshly grated ginger

1/4 cup ice water, more as needed

Olive oil

Directions

Flash freeze meat and fat cubes on cookie trays, along with meat grinder components

Grind cold Turkey with cold pork back fat cubes with the cold meat grinder, catch in a bowl in ice water.

Combine kosher salt, black pepper, garlic, sage, and ginger, in a bowl.

Season the ground meat with the spices

Portion into Pattie’s and freeze, or cook with olive oil as desired.
