Tonnato and salmon pasta

Ingredients

400g cherry tomatoes

80g black kale or spinach

2tbsp butter

250mI hot fish stock

250g fresh tagliatelle

2 pieces of salmon (around 220g)

400g mussels

a big bunch of parsley, roughly chopped

3tbsp créme fraiche

lemon wedges, to serve

Directions

1 Heat a saucepan and cook the tomatoes and black kale or spinach in the butter. Add the fish stock, tagliatelle, salmon and mussels. Cover and cook for 6-8mins until the pasta is cooked through.

2 Remove the pan from the heat and break up the salmon. Stir the parsley and creme fraiche into the pasta, and serve immediately with lemon wedges.
