Twice Cooked Pork

Ingredients

First Cook:

1 lbs Pork Belly or Shoulder

2 tbsp Shaoxing Wine

1 tbsp Szechuan Peppercorn

1" Knob Ginger (Coin Slices)

1 Green Onion

Second Cook:

1/2 Cup Oil

2 Cloves Garlic (Diced)

1" Knob Ginger (Diced)

1 tbsp Fermented Black Bean

1 heaping spoonful (around 2 tbsp) Doubanjiang

1/4 Leek

1 tbsp Soy Sauce

1 tsp MSG

1 tsp Sugar

Directions

In a pot, bring water to a boil

When boiling, add all of your aromatics and your pork. Cool for 20-30 mins or until cooked all the way through

Take the pork out and slice into thin slices

In a pan, bring oil up to heat and add pork in. Stir fry until a crisp begins to form

Move pork to one side of the pan and toss in garlic, ginger, doubanjiang, and beans and stir fry until aromatic

Throw leeks in and quickly add soy sauce, msg, and sugar. Mix until evenly coated and serve
