Protein Pancake Bowl (No Protein Powder)

1/2 cup quick oats or oat flour
1/2 tsp baking powder
1/4 tsp baking soda
1 egg
1/2 cup cottage cheese
1 tsp vanilla extract
1-2 tbsp milk of choice
Mix-ins: Berries, chocolate chips, or nuts
Directions
Blend all the ingredients together in a blender until smooth.
Pour the batter into a small greased baking dish. Optionally mix in berries etc.
Bake at 350°F for 20-25 minutes, until golden on top and cooked through.
Add your favorite toppings or syrup and enjoy!
