Sweet Potato Brownies
Makes 9 brownies

1 cup sweet potato or pumpkin puree (~240g)
2 eggs
1/4 cup nut butter
1/2 cup sweetener
2/3 cup chocolate protein powder*
1/3 cup cocoa powder
1/2 tsp baking powder
1 tsp vanilla extract
Pinch of @cornishsea_salt
Directions
Preheat the oven to 180C and line a square baking tin.
Steam or boil the sweet potato and blend until it forms a smooth consistency.
Transfer the sweet potato puree into a large bowl. Whisk in the eggs, nut butter, sweetener and vanilla until well combined.
Add the protein powder, cocoa powder, baking powder and salt. Mix until just combined.
Pour the batter into to the baking tin. Optional to sprinkle over chocolate chips, nuts or swirl through some extra nut butter.
Bake for 25-30 minutes or until a skewer comes out clean. They will go fudgy once they cool!
I used @nakedharvestsupplements choc malt protein (discount code: MIRANDA15). Optional to use almond flour instead but they won’t be as high in protein.
