Turkey Pepper “Bolognese”

Ingredients

  • 3 large bell peppers (red orange yellow) diced

  • 3 cloves of garlic (minced)

  • 1 large sweet yellow onion diced

  • 2.5-3lbs 93:7 ground Turkey

  • Salt pepper paprika

  • 2lb radiatore (for all sauce)

  • 2 24oz jars SB tomatoe Basil

  • A TINY bit of red pepper flakes

  • Bay leaf!

  • Optional: Locatelli Pecorino Romano

Directions

  1. Pan fry ground Turkey in large pot

  2. Add 2 jars (16oz) of pasta sauce and simmer

  3. Sautee diced onions in a pan then add garlic then peppers

  4. Carmelize and add to sauce pot

  5. Add salt pepper paprika to taste

  6. Add pasta

Notes

Makes ~10 cups of sauce. 5 cups per 1lb pasta
