One-pan Mediterranean Chicken Dinner

Ingredients

chicken thighs (6, skin on)

zucchini

cherry tomatoes

bell pepper/s/mini bell peppers

feta cheese

red onion

Kalamata olives

chopped parsley

marinade:

1/2 cup of olive oil

lemon juice from 1 lemon

3-4 minced garlic cloves

1 tbsp of finely chopped parsley

1 tbsp of finely chopped mint leaves (optional, but preferred)

1 1/2 tsp of salt

1 tsp of dijon mustard

1 tsp of dried oregano

1/2 tsp of dried thyme

Directions

Preheat your oven to 200C/400F.

Mix the marinade ingredients and pour 2/3 over your chicken thighs. Mix well and set aside to marinate for 15-30 min or overnight.

Cut all your veggies except for tomatoes into thick slices.

Put them along with cherry tomatoes in an oven-safe tray in one layer. Pour the rest of the marinade and mix.

Place your chicken skin up. Brush it with the remaining marinade from the chicken. Spread Kalamata olives around.

Bake it in the oven for 20 min. Remove from the oven.

Sprinkle feta cheese over your veggies. Spray chicken skin with some more olive oil.

Broil for 5 min on the top rack.

Sprinkle with chopped parsley before serving.
