Strawberry Bars

*Shortbread:
½ Cup - Unsalted Butter (softened)
⅓ Cup - Powdered Sugar
¼ tsp - Salt
1 Cup - Flour

*Custard:
1 can - Sweetened Condensed Milk
4 Egg Yolks
1 cup Pureed Fresh Strawberries (depending on size, 6-12 berries)
2 Tbsp - Lemon Juice
¼ tsp - Salt
2-3 drops of Red Food Coloring
Directions
1. Preheat oven to 350°
2. Line 9x9 pan with parchment paper.
3. Using electric mixer, beat the butter and sugar together until fluffy.
4. Add Salt and Flour, mix until just combined.
5. Dump mixture into prepared pan, and spread out evenly.
6. Bake for 15 minutes.
7. Meanwhile, puree the strawberries in a blender.
8. Add egg yolks, condensed milk, lemon juice, salt, and food coloring. Mix.
9. Once the 15 minutes has passed on the shortbread, pour strawberry custard mix on top and reinsert into the oven.
10. Bake for 25-30 minutes, or until the center is soft, but set.
11. Cool to room temperature, then cover and chill for at least 3 hours.
12. To serve, lift out of pan an cut the rough edges off with a knife.
13. Cut into 12 rectangles. Add strawberry garnish and powdered sugar.
