Baked Black Bean Taco

Ingredients

1 large white onion

4 garlic clove

1 tsp paprika

1 tsp oregano/basil each

1/2 tsp cumin

1 tbsp tomato paste

1 large carrot

1 jar black beans @boldbeanco

1 cup stock

salt + pepper to taste

corn tortillas

handful soaked cashews

few tbsp nutritional yeast

1/2 tsp garlic + onion powder

salt and pepper to taste

fresh coriander

Directions

fry the roughly chopped onion and garlic until starting to brown, add the spices + tomato paste then toast for a few more minutes.

add the grated carrot and black beans then fry quickly before adding the stock and simmering until reduced. Mash up into a chunky mixture.

place a few tbsp of the beans in a corn tortilla, fold over, spray with oil and bake or air fry until crispy.

blend the ingredients for the cashew cheese sauce, serve garnished with coriander and enjoy!
