Passover Chocolate Chip Cookies

Ingredients

They’re chewy, ridiculously easy to make in one bowl, and honestly just as good as regular chocolate chip cookies.

Passover Chocolate Chip Cookies🍪

1 cup avocado oil (or any neutral oil)

3/4 cup brown sugar

1/4 cup white sugar

2 eggs

1 egg yolk

1 tsp vanilla sugar (or vanilla)

1 tsp baking soda

1/2 tsp salt

1 vanilla pudding package (2.8oz)

4 cups almond flour

1 cup chocolate chips (or more)

Directions

Preheat oven to 350 F. Line a baking sheet with parchment paper.

In a mixing bowl combine oil and both sugars. Mix until incorporated. Add eggs and egg yolk one at a time, whisking in between.

Add vanilla sugar, baking soda and salt and mix. Add vanilla pudding and almond flour. At this point you can mix using your hand.

Mix in chocolate chips.

Form balls and place on baking sheet. Separate them enough so they don’t stick to each other.

Bake for 11-13 minutes.

Freezing tip: You can freeze them in large ziploc bags or in tupperwares only when cooled completely. Thaw as needed.

No vanilla pudding? Not a problem. Sub it for 1/3 cup of tapioca starch + extra 1/2 cup of almond flour. Bake it between 12-14 minutes.
