Creamy Crockpot Tortellini

1 lb Italian sausage, casings removed
1 onion, chopped
3 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 cup chicken broth
1 cup heavy cream
1 package (9 oz) cheese tortellini
4 cups fresh spinach
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Grated Parmesan cheese for serving
Directions
In a skillet, cook Italian sausage over medium heat until browned. Drain excess fat and transfer to the crockpot.
Add onion, garlic, diced tomatoes, tomato sauce, chicken broth, basil, oregano, salt, and pepper to the crockpot. Stir to combine.
Cook on low for 5-6 hours or on high for 3-4 hours.
About 30 minutes before serving, add cheese tortellini and spinach. Stir in heavy cream.
Cook until the tortellini is tender and the spinach is wilted.
Serve topped with grated Parmesan cheese.
Notes
I added way more broth because it all boiled out. Add more if you want it to be soup
