4 cups unsalted whey leftover from making cheese
½ cup fresh lemon juice
3-4 tablespoons honey or agave syrup (or more to taste, or use sweetener of your choice)
3-4 tablespoons hot water (optional, only use if you need to dissolve honey or sugar)
Directions
Strain the whey through a paper towel to make sure that there is no cheese or curdled milk remaining. I do this by setting up a mesh strainer or a funnel over a bowl or a bottle, lining it with a paper towel, and slowly pouring the whey through.
Combine the whey and lemon juice and stir well. Stir in sweetener of your choice. If using sugar or honey, dissolve it in ¼ cup hot water first and then stir it into the lemonade. Agave and other liquid sweeteners dissolve quickly without needing the hot water. Adjust the sweetener to taste. Stir well, pour over ice or chill, and enjoy!
