Thai Crunchy Peanut Salad

Ingredients

3 cups shredded cabbage or coleslaw mix

1 large carrot, julienned

1 red bell pepper, thinly sliced

2 green onions, sliced

½ cup fresh cilantro, chopped

¼ cup roasted peanuts, chopped

3 tablespoons peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

1 tablespoon lime juice

1 teaspoon sesame oil

1 clove garlic, minced

½ teaspoon chili flakes (optional)

Directions

In a large bowl, combine cabbage, carrot, bell pepper, green onions, and cilantro. (5 minutes)

In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, lime juice, sesame oil, garlic, and chili flakes until smooth. (3 minutes)

Pour the peanut dressing over the salad and toss until everything is evenly coated. (2 minutes)

Sprinkle with chopped peanuts and serve immediately or chilled. (1–2 minutes)
