Creamy Chicken and Rice Soup

Ingredients

1/2 of a medium onion chopped

3-4 stalks of celery chopped

1/2 of a large carrot chopped

1 box of wild rice and seasoning packet

3-4 cloves crushed garlic

3 chicken breasts

6 cups of chicken broth

2 bay leaves

Thyme

Trader Joe’s 21 seasoning salute

Optional: sometimes I add frozen broccoli

Directions

Add all the chopped veggies, spices, and whole chicken breasts to a pressure cooker. Cook on pressure cook for 26 minutes. Release the pressure when it’s done.

Take the chicken out and shed it with two forks

In a pot on the stove create a rue with 2 tablespoons butter and flour until it creates a paste. Stream in heavy cream or half and half until it becomes the thickness of glue.

Whisk the rue mixture into the soup and return the shredded chicken to the pot. Enjoy!
