Copycat California Pizza Kitchen BBQ Chicken Pizza

1 tbsp. extra-virgin olive oil, plus more for brushing
1 (8-oz.) boneless, skinless chicken breast, cut into 1" pieces
Kosher salt
Freshly ground black pepper
All-purpose flour, for dusting
16 oz. store-bought or homemade pizza dough, room temperature
2 tbsp. BBQ sauce, plus more for drizzling
1/2 c. shredded cheddar
1/2 c. shredded Fontina
1/4 small red onion, thinly sliced
Ranch dressing and thinly sliced chives, for serving
Directions
Arrange a rack in upper third of oven; preheat to 450°. In a large skillet over medium-high heat, heat oil. Add chicken; generously season with salt and pepper. Cook, stirring occasionally, until golden brown and cooked through, 6 to 8 minutes.
Brush a large (12") ovenproof skillet with oil. On a lightly floured surface, roll dough until circumference matches your skillet. Transfer to prepared skillet.
Spread BBQ sauce onto dough, leaving a 1/2" border around the edge. Top with cheddar, Fontina, chicken, then onion. Brush dough with oil; sprinkle with salt.
Bake pizza until crust is crispy and cheeses are melted, about 15 minutes. Carefully transfer skillet to stovetop and cook over high heat until desired color is reached, 1 to 2 minutes more.
Drizzle pizza with BBQ sauce and ranch dressing. Top with chives.
