Ingredients

Frozen or fresh mix veg - 2 cups

Washed rice - 2 cups

Onions - 1 chopped

Tomatoes- 1 chopped

Ginger & Garlic - Fresh paste - 2tbsp

Green chillies - 6 (Birds eye - 2)

Cinnamon stick - 2-3

Cloves - 5-6

Bay leaves - 2

Star anise - 2

Oil - 2 tbsp

Coconut milk - 1 cup

Coriander leaves for garnish

Directions

  1. Heat oil and fry cinnamon, bay leaves, cloves and star anise

  2. Add chopped onion and fry till brown

  3. Add ginger garlic paste and chopped chillies

  4. Add tomatoes

  5. Add mix veg and sauté for a few min

  6. Add washed rice

  7. Add 1 cup coconut milk to 3 cups of water and salt

  8. Pressure cook
