Honey Garlic Slow Cooker Chicken Thighs

6-8 bone-in or boneless skinless chicken thighs
½ cup honey
¼ cup soy sauce
4 cloves garlic (minced)
2 tablespoons ketchup
1 tablespoon rice vinegar
1 teaspoon sesame oil
½ teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon sesame seeds
2 tablespoons chopped green onions
Directions
Place the chicken thighs in the bottom of the slow cooker in a single layer.
In a mixing bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, sesame oil, and black pepper.
Pour the sauce evenly over the chicken thighs, making sure they are well coated.
Cover and cook on Low for 6-7 hours or on High for 3-4 hours until the chicken is tender and fully cooked.
Remove the chicken from the slow cooker and set aside on a plate.
In a small bowl, mix cornstarch and water until smooth.
Stir the cornstarch mixture into the sauce in the slow cooker.
Turn the slow cooker to High and cook uncovered for 15-20 minutes until the sauce thickens.
Return the chicken to the slow cooker and spoon the thickened sauce over the top.
Let the chicken rest for 5 minutes before serving.
Garnish with sesame seeds and chopped green onions before serving.
