Loaf pan (10 cm x 19 cm x 7 cm)
125 g soft butter
125 g sugar
2 eggs
200 g flour
1 ½ teaspoons baking powder
Pinch of salt
Juice and zest of 2 small organic lemons
For the Glaze:
Juice of 1 lemon
50 g powdered sugar
Directions
Preheat the oven to 180 degrees Celsius. Line the loaf pan with parchment paper or grease it with butter and dust with flour.
In a bowl, beat the soft butter with the sugar until creamy.
Add the eggs one at a time to the butter-sugar mixture, whisking well.
Incorporate the juice and zest of the lemons into the mixture.
Mix flour, baking powder, and salt. Gradually add the flour mixture to the butter-sugar mixture and mix well.
Pour the batter into the prepared loaf pan and smooth the top.
Bake the lemon cake in the preheated oven for about 25-30 minutes until it's golden brown, and a toothpick comes out clean.
Mix the juice of another lemon with powdered sugar to form a lump-free glaze.
Remove from the oven and let the cake cool in the pan. Pour the lemon glaze evenly over the cake.
Allow the cake to cool completely before slicing.
