Ingredients

950g (33.51 oz) chicken

30g (1.06 oz) rock sugar

20g (0.71 oz) young ginger, lightly smashed

6 cloves garlic

1/2 tsp cinnamon

1 pc star anise

3 tbsps premium dark soy sauce

600g (21.16 oz) potatoes

250g (8.82 oz) carrots

Enough water to cover the chicken

4 tbsps light soy sauce

1.5 tbsps oyster sauce

Some cornstarch solution

Directions

Fry chicken skin down for 2 minutes

Add sugar fry 5 minutes

Add spices and dark soy sauce, stir

And carrots and potatoes

Cover with water

Add light soy and fish sauces

Cook 40 minutes

Thicken with cornstarch
