Mediterranean Chicken Tacos

Ingredients

12 corn or flour tortillas, warmed

diced tomatoes

diced cucumber

diced red onion

crumbled feta cheese

1 Tbsp olive oil

1 ½ ground chicken

4 cloves garlic, minced

1 tsp dried oregano (or 1 Tbsp fresh oregano)

1 tsp dried thyme (or 1 Tbsp fresh thyme)

2 Tbsp fresh parsley

½ tsp crushed red pepper

1 medium zucchini, diced

1 red bell pepper, diced

½ cup kalamata olives, sliced

salt, to taste

pepper, to taste

Directions

Heat olive oil in a skillet over medium-high heat. Add ground chicken and cook, breaking up with a spoon or spatula, until cooked through.

Add garlic, herbs, red pepper, zucchini, bell pepper and kalamata olives. Stir and cook until vegetables have softened. Taste and adjust for salt and pepper.

Divide chicken mixture among warmed tortillas. Garnish with tomato, cucumber, onion, and feta cheese. Serve immediately.
