One Pan Creamy Orzo with Chicken Sausage

Italian chicken sausage, chopped
2 cups dry orzo
3 tbsp olive oil
4 cups chicken broth
6 cloves garlic, minced
1/2 cup canned full fat coconut milk (or heavy cream)
1 cup grated parm
1 bag spinach
Seasonings: chili flakes, salt, pepper, dried herbs
Fresh basil for serving
Directions
Cook chicken sausage in pan with oil for 8 minutes
Add orzo and garlic to the pan. Add a bit more olive oil and “toast” the orzo for 1 minute. Add chicken broth, coconut milk, and seasonings. Bring the orzo to a boil and then cover and reduce to a simmer. Cook for 10 minutes.
Add spinach and parm. Mix well and serve.
