Cheesy Taco Potatoes

Ingredients

1 lb lean ground beef

4–6 medium Russet potatoes, diced

1 packet (1 oz) taco seasoning

½ cup water

1 cup shredded cheddar or Mexican-blend cheese

Salt and black pepper, to taste

Directions

Cook diced potatoes until tender, then set aside. In a skillet, brown the ground beef and drain excess grease. Stir in taco seasoning and water, then simmer until thickened. Add potatoes and toss everything together. Sprinkle cheese over the top, cover, and let melt.

Serve hot with sour cream, salsa, or green onions.
