Crockpot Honey Garlic Chicken

1 1/2 lbs boneless, skinless chicken thighs
1/3 cup soy sauce
1/3 cup honey
2 tbsp tomato paste
2 tsp chili paste (sriracha)
4 cloves garlic, minced
1 tbsp rice vinegar
2 tbsp cornstarch
Serve with rice.
Directions
Place the chicken in the bottom of crockpot.
In a medium mixing bowl, whisk together the soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour mixture over the chicken.
Cover and cook on low for 4-5 hours or high for 2-3 hours, flipping the chicken halfway through.
Remove the chicken. Whisk the cornstarch into the remaining liquid. Cover and cook on high for 15 minutes until the sauce thickens to desired consistency.
Meanwhile, shred the chicken and return to the crockpot. Mix with the sauce.
Serve over rice, topped with sesame seeds.
