Proper hotpot vibes with a gently spiced lentil base and crispy potatoes. Comfort food that just happens to be meat-free.
Ingredients (Serves 4)
Potatoes – £1.30 (2kg bag, used ~1.5kg)
Carrots – £0.55 (500g bag, used 4)
Celery – £0.80 (bunch, used 4 sticks)
1 onion – £0.25
2 × tins green lentils – £1.40
2 tbsp tomato purée
1 tbsp olive oil
1 tsp garlic powder
1 tsp ginger powder
2 tsp garam masala
4 tbsp mild curry powder
600ml veg stock
Salt
Directions
Slice potatoes thin, parboil in salted water until just fork-tender. Drain.
Blitz onion, carrots & celery until fine.
Fry veg in oil 5–6 mins until soft. Stir in tomato purée, cook 1–2 mins.
Add garlic, ginger, garam masala & curry powder. Stir well.
Add stock, simmer 10 mins. Stir in lentils, cook 2–3 mins.
Spoon into a dish, top with potatoes, brush with melted butter- optional.
Bake at 200°C fan for 15 mins until golden, you certainly can bake longer, but everything is fully cooked.
