One Pan Baked Dumplings

Ingredients

1 bag frozen dumplings (22–24 pieces, pork, shrimp, or vegetable)

3 baby bok choy heads, washed and leaves separated

1 can coconut milk

4 tbsp red curry paste

2 tbsp soy sauce

3 tbsp hoisin

1 tbsp minced garlic

1 tbsp sesame oil

2 tbsp mirin (sweet rice wine) or sugar as a substitute

1 tsp fish sauce

1 tbsp grated ginger

2 tbsp chili crisp

1/3 cup green onion, thinly sliced

Sesame seeds (optional)

Directions

Preheat oven to 400°F

In a small to medium baking dish (9x9 or large pie plate), whisk together the coconut milk, red curry paste, soy sauce, hoisin, garlic, sesame oil, mirin, fish sauce, and grated ginger until smooth.

Place the frozen dumplings flat-side down into the sauce, crowding them to fit as many as possible. Tuck the bok choy leaves between and over the dumplings.

Transfer the dish to the oven and bake for 30 minutes, until the sauce has thickened and the dumplings are cooked through.

Remove from the oven, gently stir, and top with chili crisp, green onions, and sesame seeds if desired. Serve directly from the dish with a spoon, or ladle over rice to soak up the flavorful sauce.
