Ingredients

1 cup natural peanut butter (creamy or crunchy)

1/2 cup plain Greek yogurt

1/3 cup maple syrup or honey

2 eggs

1 tsp vanilla extract

1/2 cup quick oats or oat flour

1/4 tsp baking soda

Pinch of salt

Optional: 1/4 cup mini chocolate chips or chopped nuts

Directions

Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper or grease lightly.

In a medium bowl, whisk together peanut butter, Greek yogurt, maple syrup (or honey), eggs, and vanilla until smooth.

Stir in oats (or oat flour), baking soda, and salt until well combined. Fold in chocolate chips or nuts if using.

Pour the batter into the prepared baking dish and spread evenly.

Bake for 18–22 minutes, or until the center is set and edges are golden.

Let cool completely before slicing into squares. Enjoy!
