total timeIngredients
1 cup fresh cilantro leaves, tightly packed
1/2 cup fresh parsley leaves, tightly packed
1 jalapeño, stemmed and seeded (or keep the seeds for extra heat!)
1 garlic clove, peeled
1 small avocado, pitted and scooped out
1/2 cup Greek yogurt or sour cream (for creamy richness)
Juice of 1 lime (adjust to taste)
2 tablespoons olive oil
Salt and pepper to taste
2 tablespoons water, or more for desired consistency
Directions
Place the cilantro, parsley, jalapeño, and garlic in a food processor or blender.
Pulse a few times to break down the herbs and pepper.
Add the avocado, Greek yogurt, lime juice, and olive oil.
Blend on medium speed until the mixture starts to come together.
Add water gradually to reach your desired consistency; the sauce should be smooth but slightly thick.
Season with salt and pepper to taste.
Taste and adjust lime juice or salt if needed.
Transfer the sauce to a bowl or jar and let it chill for about 20 minutes to allow flavors to meld.
Serve immediately or store in an airtight container in the fridge for up to 3 days.
