Honey Balsamic Sweet Potato Medallions with Feta

2 large sweet potatoes, sliced into 1/2-inch medallions
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
3 tbsp honey
2 tbsp balsamic vinegar
1/2 cup feta cheese, crumbled
1 tbsp fresh thyme or parsley, chopped (optional garnish)
Directions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss 2 large sweet potatoes, sliced into 1/2-inch medallions with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper until evenly coated. Arrange in a single layer on the baking sheet.
3. Roast for 15 minutes.
4. While potatoes roast, whisk together 3 tbsp honey, 2 tbsp balsamic vinegar, and 1 garlic cloves, minced in a small bowl.
5. Flip the medallions, brush generously with the honey balsamic glaze, and return to the oven.
6. Roast until tender and caramelized at the edges, about 12-15 minutes.
7. Remove from oven, drizzle with any remaining glaze, sprinkle with 1/2 cup feta cheese, crumbled and 1 tbsp fresh thyme or parsley, chopped (optional garnish). Serve warm.
Notes
For extra caramelization, broil for 1-2 minutes at the end (watch closely to avoid burning the honey). Toasted walnuts or pecans make a great crunchy addition.
