Ingredients Pizza Crust:

70g Self Rising Flour

12g Coconut Flour

5g Nutritional Yeast

Garlic Powder (Don’t be shy)

150g Plain Non Fat Greek Yogurt

75g Egg Whites

28 Cal Elote Sauce:

170g Plain Non Fat Greek Yogurt

113g 2% Cottage Cheese

40g Sriracha

30g Honey

5g Low Sodium Soy Sauce

Juice and Zest from ½ Lime

½ tsp Sea Salt

¼ tsp Black Pepper

¼ tsp Garlic Powder

¼ tsp Smoked Paprika

Ingredients for Elote Pico:

1 Bag Frozen Corn (16oz)

100g Red Onion

40g Jalapeno

10g Cilantro

15g Minced Garlic

20g Cotija Cheese

½ tsp Sea Salt

½ tsp Smoked Paprika

¼ tsp Garlic Powder

Ingredients for Elote Sauce Chicken Dip:

16oz Chicken Breast

Cajun Seasoning (for Chicken)

1/4th Batch Elote Sauce

Directions

Pat chicken breast dry, flatten and season both sides with a cajun seasoning. Air fry on 400 degrees F for 9-10 minutes.

Blend all elote sauce ingredients until smooth.

Sauté corn on 7/10 heat until lightly charred. Season with sea salt and then combine with remaining elote ingredients in a bowl.

Once chicken cools for 10 minutes, chop and toss in 1/4th of the elote sauce.

Make pizza crust by adding dry ingredients to bowl, mixing and then adding wet ingredients. Mix till a thick paste.

Lay down parchment paper and add pizza crust dough to middle. Spread into a crust.

Bake on 450 degrees F for 6 minutes. Then take crust off parchment and add back to oven for 3-4 minutes. Then add mozzarella and add back to oven.

Then add your 1/3rd elote chicken, 1/3rd elote pico and cotija. Add back to oven for 4-6 minutes. Then slice up and enjoy!
