Garlic Butter Beef Linguine in Cheesy Alfredo Sauce

10 oz linguine
1 lb ground beef
1 tbsp olive oil, if needed
3 tbsp butter, divided
3 cloves garlic, minced
1 small yellow onion, finely diced
1 1/4 cups heavy cream or half and half
1/2 cup beef or chicken broth or pasta water
4 oz cream cheese, cubed
3/4 cup grated Parmesan
1 cup shredded mozzarella or Italian blend
1 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt, plus more to taste
1/4 tsp black pepper
Pinch red pepper flakes (optional)
Parsley or green onions (optional)
Directions
Cook linguine in salted boiling water until al dente, 9 to 11 minutes. Reserve 1/2 cup pasta water, then drain.
Heat a large deep skillet over medium high. Add 1 tbsp butter and a little olive oil if needed, then ground beef. Cook 5 to 7 minutes, breaking it up, until browned. Drain excess grease.
Add onion and cook 3 to 4 minutes. Stir in garlic and cook about 30 seconds.
Add remaining 2 tbsp butter, Italian seasoning, garlic powder, onion powder, salt, pepper, and red pepper flakes. Stir 1 minute so the beef is coated.
Pour in cream and broth or pasta water. Stir, scraping the bottom, and simmer 3 to 4 minutes until slightly thickened.
Turn heat to low. Stir in cream cheese until melted, then add Parmesan and mozzarella a handful at a time until smooth. If too thick, add a splash of pasta water. Adjust salt and pepper.
Add linguine and toss 2 to 3 minutes until coated and glossy.
Let sit off heat a couple of minutes so the sauce clings. Garnish with parsley or green onions if you like and serve hot.
