- Bang Bang Chicken Salad

Ingredients

1 rotisserie chicken, pulled apart

2 cups, shredded purple cabbage

2 cups, shredded carrots

2 cups, diced cucumbers

1 cup, diced green onions

1/2 cup, chopped cilantro

1 avocado, cubed

Dressing ingredients

2 tbsp, tahini

2 tbsp, Chinese black vinegar

1 tbsp, soy sauce

1 tbsp, honey (to sweeten)

1 tbsp, chilli crunch oil (@momofukugoods is my fav)

Directions

Prepare all your fresh ingredients for the base and add to a large bowl.

Pull apart and shred your rotisserie chicken, add to your large bowl and put aside.

Add all dressing ingredients to a large measuring cup or small bowl and whisk until smooth but thick.

Dress your salad and toss.

Add diced avocado - if using.

Enjoy!
