Eggplant Fatteh Pasta

2 eggplants
2 cups small pasta
1 onion
1 tsp minced garlic
2 tbsp tomato paste
1/2 cup chopped fresh cilantro
2 tbsp pomegranate molasses
2 lemons, juiced
1 tbsp salt
1 tsp black pepper
1 tsp paprika
1 tsp sumac
1 cup fried bread
2 cups hot water
For the sauce
1 cup yogurt
2 tbsp tahini
1/2 tsp minced garlic
1 tbsp pomegranate molasses
Directions
Add olive oil and the onion and sauté. Add the garlic, spices, tomato paste, cilantro, pomegranate molasses, and pasta. Add the water and let it cook. Once the pasta is cooked, add the lemon juice and the fried eggplant.
