Crispy Sesame Tofu

1 block Firm Tofu
10tbsp cornstarch
35g un-toasted sesame seeds
1tsp salt
1/2tsp white pepper
1/2tsp garlic powder
1/2tsp onion powder
60ml neutral oil
2 garlic cloves, minced
180ml chicken stock
3tbsp sugar
1 and a 1/2tbsp oyster sauce
1tbsp light soy
1tbsp honey
1tbsp shaoxing
1 and a 1/2tsp rice vinegar
2tsp cornstarch
1tbsp water
1/2 a green onion
Directions
Drain or press tofu, then pat dry and cut into 1inch cubes.
In a bowl combine cornstarch, un-toasted sesame seeds, salt, white pepper, garlic powder and onion powder, then toss the tofu cubes in the mixture until well coated.
Heat oil in a pan over medium-high, then fry tofu until crispy on all sides and transfer to a plate when done.
Reduce to medium and in the same pan make the sauce. Add minced garlic and fry until fragrant, then pour in the stock, oyster sauce, light soy, honey, shaoxing and white pepper with a splash of sesame oil, then bring to a simmer and cook for 3 minutes.
Make a cornstarch slurry and thicken the sauce, then reintroduce the tofu and any other cooked protein or veg like beansprouts, toss to combine well and serve garnished with sesame seeds and spring onions.
There will be a decent amount of sauce left over, use for dipping or retain and refrigerate and use within 3 days.
