I’ve been a bit off posting the past week, life’s been full, and I really just wanted to slow down and soak up the weekend. Let me know if you try this one 🥰
Ingradients:
250g ripe banana (2-3 bananas)
2 carrots, grated (add more if you’re team carrot cake)
1/3 cup melted butter
1/4 cup maple syrup
2 eggs
1 tsp vanilla extract (measure with your heart)
100g Greek yogurt
200g plain flour
60g @macr0mike vanilla protein powder DC: amb-noa
can swap for more plain flour)
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
Directions
Mash banana, then mix in melted butter, maple syrup, vanilla, eggs, and yogurt.
Add in grated carrot, then sift in flour, protein, baking powder, and baking soda.
Stir until just combined (don’t overmix!).
Bake at 180°C for ~30 minutes or until golden and cooked through. Let cool slightly.
Whipped Cream Cheese Frosting
100g cream cheese
50g vanilla coconut yogurt
2 tbsp (30ml) whipping cream
1/4 cup icing sugar
Blend or whip until smooth.
Spread over cooled cake and top with coconut or crushed walnuts.
