3 spring onions
500g Woolworths RSPCA Approved chicken mince
2 tbs salt-reduced soy sauce
3cm ginger, finely grated
2 cloves garlic, crushed
300g wonton wrappers
1 bunch baby choy sum, bottom trimmed
500mL chicken stock
2 tbs crispy chilli oil
¼ cup salt-reduced soy sauce
Directions
Finely chop 1 spring onion. For the wontons, add mince, chopped onion, soy sauce, ginger and garlic to a medium bowl. Stir to combine.
Place 2 tsp chicken mixture in the centre of each wonton wrapper. Line the edges of the dumpling wrapper with water. Fold in half into a triangle and seal. Place on a baking paper-lined tray. Repeat with remaining chicken mixture and wrappers.
Add all broth ingredients to a medium saucepan on medium heat. Simmer for 5 minutes or until reduced slightly.
Meanwhile, bring a large pot of water to a boil. Add choy sum and cook for 1 minute or until vibrant and softened slightly. Remove and set aside. Add wontons and cook for 7 minutes or until cooked through. Drain. Divide choy sum and dumplings amongst serving bowls. Top with broth. Thinly slice remaining onion and sprinkle on top. Serve.
