LIGHT PORK AND RICE SOUP

Ingredients

2 tbsp olive oil 1 large onion, chopped 3 carrols, grated 100g mushrooms, sliced 2 pork chops, cut into cubes 11 hot chicken stock 100g rice 1 courgette, chopped 1 large handful of baby spinach leaves Salt and black pepper

Directions

1 Heat the olive oil in a saucepan over a medium heat and cook the onion, carrots and mushrooms for five minutes until the onions have softened.

2 Add the pork and continue to cook for five minutes until it has turned white on all sides.

3 Pour in the stock and bring to a boil.

4 Use a sieve to rinse the rice under cold running water.

5 When the soup has come to the boil, add the rice and reduce the heat slightly. Simmer for 20 minutes until the pork is cooked.

6 Add the courgette and the spinach and cook for a further five minutes. Season to taste.
