Honey Mustard Chicken

4 chicken breasts
4 tbsp honey
2 tbsp wholegrain mustard
1 tbsp Italian seasoning
4 garlic cloves, crushed handful of fresh basil leaves 175ml chicken stock
1 tbsp cornflour, mixed to a paste with 1 tbsp water (optional)
90g low-fat soft cream cheese
fresh basil, to garnish (optional)
salt and pepper, to taste
Directions
1 Place all the ingredients, except the soft cheese, in the slow cooker, stir and season to taste. Cook on high for 3 hours, then stir in the soft cheese. Garnish with fresh basil leaves, if using.
This chicken goes well with pasta, potatoes or even salad and rice. I often serve it with broccoli and mashed potato - 150g of mash adds about
132 calories.
