Ingredients

1 lbs Ground Chicken (96/4) (453g)

6 Low Cal Burrito Tortillas (Xtreme Wellness)

1 Onion

1 Bell Pepper

1 Cup 0% Greek Yogurt (240g)

1 Cup Reduced Fat Cheese (112g)

1/2 Cup Black Beans (85g)

1/2 Cup Corn (80g)

1/2 Cup Red Enchilada Sauce (120g)

1 Taco Seasoning Packet

Directions

1.) Brown chicken; sauté onion and pepper.

2.) Add taco seasoning and enchilada sauce; simmer.

3.) Stir in yogurt, beans, corn, and cheese; chill briefly.

4.) Fill and roll tortillas; toast if desired.

5.) Store in fridge or freezer.
